Aburaage (油揚げ) is a type of Japanese deep-fried tofu pouch made from firm tofu. It is made by cutting firm tofu into thin slices and deep-frying them twice in vegetable oil. The first fry is at a lower temperature of (110-120 °C), which causes the tofu to expand in size. Then they are fried again at a higher temperature of (180-200 °C)1.
